Bring a large, heavy-based saucepan of lightly salted water to the boil. Add the pasta, return
to the boil and cook for 8-10 minutes, or until tender but still firm to the bite.
Meanwhile, heat the olive oil in a large, heavy-based frying pan. Add the garlic, rocket and
chillies and stir-fry for 5 minutes, or until the rocket has wilted.
Stir 2 tablespoons of the pasta cooking water into the rocket, then drain the pasta and add to
the frying pan. Cook, stirring frequently, for 2 minutes, then transfer to a warmed serving dish.
Remove and discard the garlic cloves and chillies, garnish with red chilli flowers and serve
immediately with the pecorino cheese.
