6 large raw prawns, peeled and deveined, tails left on
1 tbsp oil
1 cooked prepared crab
1 double quantity freshly cooked sushi rice
juice and grated rind of 1 lemon
1 ripe avocado, cut into strips
1/2 cucumber, peeled and cut into slices
Method:
Saute the prawns for 2 minutes on each side in the oil. Once they are cooked,set aside to cool.
Lift the crabmeat out of the shell.
Mix the sushi rice with the lemon juice and grated lemon rind.
Divide the rice between 4 wooden or ceramic bowls. Arrange the prawns,crab, avocado and cucumber
on top of the rice.
