1 papaya, peeled
350g / 12 oz large cooked peeled prawns
assorted baby salad leaves, to serve
For the dressing
4 spring onions, finely chopped
2 fresh red chillies, deseeded and finely chopped
1 tsp fish sauce
1 tbsp vegetable or peanut oil
juice of 1 lime
1 tsp soft light brown sugar
Method:
Scoop the seeds out of the papaya and slice thinly. Stir gently together with the prawns.
Mix the spring onions, chillies, fish sauce, oil, lime juice and sugar together.
Arrange the salad leaves in a bowl and top with the papaya and prawns. Pour the dressing over
and serve immediately.
