Place the cubed chicken in a bowl and add the oil, the juice of 1 lemon, and the thyme leaves.
Season and mix until the chicken is well coated. Cover and marinate in the refrigerator for 30
minutes.
Preheat the broiler (grill) or barbecue. Lift the chicken out of the marinade and thread the
chicken and vegetables onto 8 metal skewers. Make sure you press them well together on the skewer
as they will loosen as they cook.
Broil (grill) the kebabs, turning 2 or 3 times, for 10-15 minutes, or until caramelized and
cooked through.
Garnish with slices of orange, if liked, and serve each person 2 kebabs.
