Preheat the oven to 190°C / 375°F / Gas 5. Place the chicken breasts in a shallow roasting tin
and set aside.
Heat the oil in a small pan, and fry the spring onions and garlic for 2 minutes until softened.
Add the clear honey, orange juice, orange segments and soy sauce to the pan, stirring well until
the honey has dissolved.
Pour over the chicken and bake, uncovered, for about 45 minutes,basting with the honey glaze
once or twice until the chicken is cooked. Garnish with the lemon balm or parsley and serve the
chicken and its sauce with baked potatoes and a salad.
