Cut the beef into chunks and remove any gristle, but leave on the fat. Tip the beef into a food
processor and chop briefly to grind (mince). Season with pepper and divide into 4 portions. Form
each portion into a burger about 8cm / 3 1/4 inches in diameter.
Preheat the broiler (grill) or barbecue. Broil (grill) the burgers for 4-6 minutes on each
side-a couple of minutes longer if you prefer them well done. Allow the burgers to rest for a
couple of minutes, then top each burger with a slice of cheese and broil (grill) briefly until the
cheese is just melted.
Put a lettuce leaf on the bottom of each roll. Top with a slice of tomato, a slice of cheese,
and a burger. Add condiments (relishes) of your choice if liked, and add the top of the roll. Serve
with French fries and salad.
