Guacamole

Makes: 2 1/2 cups
Ingredients:
2 medium avocados
1/2 small red onion, chopped finely
1 medium plum tomato, deseeded, chopped finely
1 tablespoon lime juice
1/4 cup coarsely chopped fresh coriander
Method:

Mash avocados in medium bowl stir in remaining ingredients.

TIP: Goes well with nachos, burritos and fajitas.
