Rinse and peel the prawns. Devein, using a sharp knife to slice along the back from the head end
to the tail, and removing the thin black intestine.
Mix the lemon juice with the garlic, herbs and butter to form a paste. Season well with salt and
pepper. Spread the paste over the prawns and marinate for 30 minutes.
Cook the prawns under a preheated medium grill for 5-6 minutes. Alternatively, heat a frying pan
and fry the prawns in the paste until cooked. Turn out onto hot plates and pour over the juices.
Serve immediately with lemon wedges, some crusty bread and salad.
