Using a sharp knife, cut the chorizo into 5mm / 1/4in thick slices. Heat a large, heavy-based
frying pan. Add the chorizo slices, without any additional fat, and cook over medium heat, stirring
frequently, for 5 minutes or until crisp and browned.
Remove the chorizo slices with a spatula or slotted spoon and drain well on kitchen paper. Drain
the fat from the frying pan and wipe out with a pad of kitchen paper.
Heat the olive oil in the frying pan over medium-Iow heat. Add the chorizo slices, garlic and
herbs and cook, stirring occasionally, until heated through. Serve immediately.
