Heat the olive oil in a frying pan over medium heat. Add the chorizo
pieces and cook for 20 seconds, stirring.
Add the mushrooms and continue cooking for a further 1-2 minutes until
the mushrooms begin to brown and absorb the fat in the pan.
Thread a pepper square, a piece of chorizo and a mushroom onto a wooden
cocktail stick. Continue until all the ingredients are used. Serve hot or
at room temperature.
