Make three quite deep, diagonal slits in the chicken flesh using a large sharp knife.
Brush the chicken all over with I the honey and sprinkle well with seasoning.
Put the chicken in a flame proof dish, uncut side uppermost, and place under a medium grill for
2-3 minutes.
Turn the chicken over and place the grapefruit segments in the slits. Brush with more honey and
cook for a further 5 minutes, or until tender. If necessary, reduce the heat so that the honey
glaze does not burn. Serve at once with noodles and salad leaves.
