1 large tomato, chopped coarsely
1 medium avocado, chopped coarsely
1 small red onion, chopped coarsely
2 tablespoons coarsely chopped fresh coriander
1/2 cup bottled tomato salsa
4 cups shredded cooked chicken
8 large flour tortillas
for the tomato salsa
2 medium tomatoes, chopped finely
2 tablespoons pickled jalapeno chillies
1/4 cup finely chopped fresh coriander
1 clove garlic, crushed
1 tablespoon lime juice
Method:
Make tomato salsa (combine all the tomato salsa ingredients in medium bowl).
Combine tomato, avocado, onion, coriander, salsa and chicken in large bowl.
Warm tortillas according to manufacturer's instructions. Top each tortilla with about an eighth
of chicken filling; roll to enclose filling. Repeat with remaining tortillas and chicken
filling.
