4 thick cod fillets
olive oil, for brushing
8 thin lemon slices
salt and pepper
To the herb sauce
4 tbsp olive oil
1 garlic clove, crushed
4 tbsp chopped fresh parsley
2 tbsp chopped fresh mint
juice of 1/2 lemon

Rinse each cod fillet and pat dry with kitchen paper, then brush with oil. Place each fillet on
a piece of baking paper large enough to encase the fish in a parcel. Top each fillet with 2 lemon
slices and season with salt and pepper. Fold over the baking paper to encase the fish and bake in a
preheated oven, 200ºC / 400ºF / Gas Mark 6, for 20 minutes, or until just cooked and opaque.
Meanwhile, to make the herb sauce, put all the ingredients into a food processor and process
until finely chopped. Season with salt and pepper. Carefully unfold each parcel and place it on a
serving plate. Pour a spoonful of herb sauce over each piece of fish before serving.
