Preheat the oven to 180ºC / 350ºF / Gas 4 and grease a 1 litre /35 fl oz oven proof dish.
Sieve the passion fruit, discarding the pulp, and place the juice in a bowl. Peel, core and
thinly slice the apples and add to the passion fruit juice, along with the 55g / 2 oz of sugar. Mix
well, then transfer the mixture to the prepared dish.
Combine the shredded coconut, flour, extra sugar and butter in a bowl and rub together until the
mixture has a crumble texture. Pile on top of the apple mixture.
Bake the crumble for 20-25 minutes, or until the topping is crisp and golden.
